VEGAN JALEPENO CHEDDAR BAY BISCUITS

These biscuits were a hit in my house! So flavorful and robust. And this recipe doesn't contain vegan cheese, instead we're using our trusty friend- nutritional yeast!




These biscuits were actually incredibly quick and easy! Simply mix all the ingredients together in a bowl, plop on a baking sheet, and bake. Yup, that's it!




Also, feel free to eliminate, or add more jalepeños as your heart desires! I found that 2 (with the seeds removed) was just right, and had the perfect amount of flavor.


 

VEGAN JALENPENO CHEDDER BAY BISCUITS

Ingredients

  • 1 ¾ cups all-purpose flour

  • ½ cup nutritional yeast

  • 2 tspn baking powder

  • ½ tspn baking soda

  • 1 tspn cane sugar

  • ¾ tspn salt

  • ½ tsp garlic powder

  • 1 heaping tspn Old Bay Spice

  • 1 ¼ cup unsweetened plain almond milk, or any plant-based milk

  • 2 Tbsp vegan butter, melted

  • 1 Tbsp lemon juice

  • 1-2 jalapeños, seeds removed and finely chopped

1. Preheat the oven to 475°F (250°C).

2. In a mixing bowl, whisk together flour, baking soda, baking powder, sugar, salt, garlic powder, nutritional yeast, and Old Bay seasoning. Set aside.

3. In a smaller mixing bowl, combine melted butter, almond milk, and lemon juice.

4. Add the wet mixture to the dry mixture and using a silicone spatula, mix until just combined. Seeing some flour swirled in is ideal.

5. Fold in the chopped jalapeños until just combined.

6. Line a baking sheet with parchment paper. Scoop out about 2-3 tablespoons of batter with a spoon and plop on the baking sheet. Batter should make about 12 biscuits.

7. Bake for 12-14 minutes, remove from oven and let cool for about 3 minutes.

8. Enjoy!
