Sticky Thai Peanut Noodles with Mushrooms

I was craving something Asian. Something Thai. And I found it with this recipe! This was the perfect answer to my prayers. It's a comfort food pasta dish with a dreamy combo of peanut butter and soy sauce. When everything is combined, it becomes super saucy and delicious. It's quick and easy, and you have the option to spice it up if you'd like!

 

Prep Time 15 min. Cook Time 20 min. Serves 2-3


STICKY THAI PEANUT NOODLES WITH MUSHROOMS

· Sauce:

· ½ cup peanut butter

· ½ cup low sodium soy sauce

· ¼ cup water

· 3 Tbsp agave (or maple syrup)

· 2 Tbsp rice vinegar (or apple cider vinegar)

· 1 Tbsp sesame oil

· 1 tspn dried ground ginger

· ½ tspn garlic powder

· Pinch red pepper flakes

· 1-2 teaspoon Siracha (optional)

· 4-oz mushrooms, sliced

· 1-2 tspn olive oil

· Salt + pepper

· 8-oz linguine or fettucine (or any type of pasta), I used protein spaghetti noodles

· Green onions for garnish

1. Whisk all the sauce ingredients together in a bowl until smooth. Set aside.

2. Bring pot of water to a boil, and cook noodles according to package directions.

3. While the pasta is boiling, heat olive oil in a small saucepan on medium-high and sauté mushrooms for about 5-7 minutes. Season with S+P and remove from heat.

4. When pasta is done boiling, drain and rinse in strainer and set aside.

5. Using the same pot for the noodles, heat on medium-low and pour in peanut sauce. Stir with a whisk for about 1-2 minutes until the sauce is warm. Add mushrooms to sauce, followed by the pasta noodles. Stir until everything is well mixed and turn off heat.

6. Garnish with green onions and sesame seeds and enjoy!
