Slow Cooker Jackfruit Pot Roast

This recipe is just downright amazing. You might just be drinking the broth out of the bowl when you're finished. It's that darn good. Salty and savory, this is the prefect comfort food recipe to cuddle up with on the couch!


Pot roast was a family favorite growing up, and was one of the only things my dad knew how to cook, well, because it's a fool-proof recipe. Just throw everything into the crockpot, wait several hours (this is actually very hard given how good your home will smell), and then enjoy! There's minimal chopping involved, which is also a bonus.


Now, if were being honest here, the texture of jackfruit will not the be as firm as beef or pork, it will be a little bit softer. BUT there is absolutely nothing lacking in the flavors. This meal is super filling and will be enjoyed by the whole family!


So go grab these ingredients and let your crockpot do the work!


 

SLOW COOKER JACKFRUIT POT ROAST

Serves 6-8. Prep time 15 min. Cook time 8 hrs.


· 2 14-oz cans jackfruit

· 2 medium sized carrots

· 1 large yellow onion

· 2 ribs celery

· 1 24-oz bag baby Dutch potatoes (or red potatoes)

· 8-oz mushrooms

· 3 large garlic cloves

· 8 cups vegetable stock

· 2 Tbsp soy sauce or liquid aminos

· 1 Tbsp vegetable Better than Bouillon

· 1 sprig fresh rosemary

· 1 tspn dried thyme

· 1 tsp garlic powder

· 1 tsp onion powder

· 1 tsp seasoning salt

· ½ tspn black pepper

· pinch red chili flakes (optional)

· S+P to taste

*For this recipe you’ll need an 8-qt crockpot. My crockpot is 7-qt and did fine although was full! You may half the recipe if using a smaller crockpot.

1. Drain and rinse jackfruit, pinching off the tough “cores” of each piece and gently breaking apart pieces (you want to keep them somewhat chunky, just massage pieces enough to loosen them up). Discard the cores and put into crockpot.


2. Chop all vegetables into chunks. I halved the potatoes, mushrooms and garlic cloves, sliced carrots and celery, and chopped the onion into large pieces.


3. Add all ingredients to the crockpot and cook on low for 7-8 hours, or on high for 4-5 hours stirring occasionally. The longer you cook it the better! The vegetables should be nice and soft, and the jackfruit will achieve a dark color.


4. Add salt and pepper to taste and enjoy!
