Pulled BBQ Jackfruit Sandwiches with Avocado Slaw

These pulled jackfruit sandwiches are the just like the real thing! Oh, and they're incredibly EASY to make!





PULLED BBQ JACKFRUIT SANDWICHES WITH AVOCADO SLAW

This recipe is easy and delish! Serves 4-6. Prep time ~15 min. Cook time ~20-30min.

INGREDIENTS

4-6 vegan buns

Seasoned BBQ Jackfruit

◊ 2 14-oz cans young jackfruit in water

◊ 1-2 Tbsp olive oil

◊ 1 tspn paprika

◊ 1 tspn garlic powder

◊ ½ tspn chili powder

◊ 4 Tbsp water

◊ ¼ tspn salt

◊ ¼ tspn pepper

◊ S+P to taste

Avocado Slaw

◊ 2 cups cabbage, finely sliced

◊ 1 avocado, mashed

◊ 1 Tbsp olive oil

◊ S+P to taste

1 cup vegan BBQ sauce OR make this awesome homemade version:

◊ 1 cup ketchup

◊ 1 Tbsp molasses

◊ 2 Tbsp maple syrup, agave, or brown sugar

◊ 1 Tbsp low sodium soy sauce

◊ 1 Tbsp vegan Worcestershire sauce (Annie’s brand offers a vegan version)

◊ 1 tspn sriracha


INSTRUCTIONS

1. Make your homemade BBQ sauce by mixing all ingredients into small mixing bowl. It’s really that easy. Set aside.

2. Rinse and drain jackfruit, and with your hand pinch off the center “core” portions of the jackfruit pieces and discard. Place into a mixing bowl and add seasonings (paprika, garlic, chili powder, and S+P to taste).

3. Heat a large skillet over medium heat and add 1-2 tablespoon olive oil. Add seasoned jackfruit and cook for 2-3 minutes.

4. Add BBQ sauce and about 2 tablespoons of water to thin out the mixture. Stir and reduce to low heat. Cook for about 20-25 minutes stirring occasionally and adding water to thin out the mixture if needed. You may simmer for up to 35 minutes for extra flavor.

5. While jackfruit is cooking, finely chop your cabbage and combine place in a mixing bowl. Add 1 tablespoon olive oil and mashed avocado. Add salt and pepper to taste. Set aside.

6. Once jackfruit has simmered, turn up to medium-high heat for a final 2-3 minutes for extra flavor and color. Remove from heat.

7. Toast your buns for a few minutes if desired, then layer a scoop of slaw and a generous amount of BBQ jackfruit on top. Grab a napkin and enjoy!
