Easy Black Bean Taquitos with a Chipotle Dipping Sauce


A super easy plant-based weeknight meal! And it it only involves one bowl and one pan, so double win. They are crispy and delicious, and make for great leftovers!

Just mash up the filling ingredients in a bowl, roll into tortillas, then fry. And you're done!


However this is one important step before rolling the taquitos. And that is to steam the tortillas before you roll. This will prevent the tortillas from cracking and falling apart. Corn tortillas can be fragile, so this step will allow for easier rolling!


To steam, wrap your tortilla stack in a damp paper towels or a clean damp dishcloth. Make sure all the corners are covered. Pop in the microwave for about 20 seconds until hot and steaming. You could also place in the oven covered with damp towels at 150 degrees for about 15 minutes while you prepare the filling.


When its time to roll your taquitos, keep your hot tortilla stack covered with the towels, removing one tortilla at a time while keeping the rest warm. This is the best method to keeping the corn tortillas flexible without cracking.


You can use flour tortillas for this recipe, however it's not authentic. I will say they are easier to handle and do not require the extra step of steaming, although steaming is still recommended.


The chipotle dipping sauce is the perfect pairing for these taquitos! The sauce uses chipotles in adobe sauce, and they certainly have a kick! You definitely have the option to spice it up if desired. The quantity listed in the recipe gives it a mild to medium kick.

Easy Black Bean Taquitos with a Chipotle Dipping Sauce



Ingredients:

  • 1 14oz. can black beans, rinsed and drained

  • 16 small corn tortillas *see notes

  • 1/3 cup vegetable oil

  • 1/2 red bell pepper, finely diced (or any color of your choice)

  • 1/2 jalepeno, finely diced (optional)

  • 1 Tablespoon vegan sour cream

  • 1 teaspoon cumin

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 teaspoon hot sauce (optional)

  • cilantro for garnish

For the Chipotle Dipping Sauce

  • 1/2 cup vegan mayo

  • 1-2 chipotles in adobe

  • 1 teaspoon adobe sauce

  • 1/2 teaspoon garlic powder

  • 3+ Tablespoons water to thin

Directions:

  1. Start by making your sauce. Place all dipping sauce ingredients into a small food processor or small blender (If you don't have either, see notes). Add water if needed to reach desired consistency. Set aside.

  2. Make your filling. Place black beans, pepper, vegan sour cream, cumin, chili powder, hot sauce, and S+P into a medium sized bowl. Add cilantro to mixture as well if desired. Mash until mixture becomes creamy, but there are still some whole beans.

  3. Steam your tortillas. Take a few paper towels or clean dishcloth and dampen with water. Completely wrap the stack of tortillas and place on a microwave safe plate. Microwave for about 20 seconds. Keep wrapped in damp towels during assembly.

  4. Assemble taquitos. While only removing one tortilla at a time from hot towel, scoop about 2 tablespoons onto each tortilla and roll. Place taquito onto a clean plate. Continue until all the filling is gone.

  5. Fry the taquitos. Heat about half of the vegetable oil in a cast iron skillet over medium heat. Once hot, start placing taquitos seam side down into skillet. Cook on each side about 2 minutes or until golden brown. Add vegetable oil as needed for frying.

  6. When taquitos are cooked and crispy, place on a plate lined with paper towels and allow to cool for at least 3 minutes.

  7. Plate and serve with dipping sauce and enjoy!


Notes

*Steaming your corn tortillas is very important! It will prevent the corn tortillas for cracking and falling apart.

*You can use flour tortillas for this recipe, however it's not authentic. I will say they are easier to handle and do not require the extra step of steaming, although steaming is still recommended.

* If you don't have a kitchen appliance to blend the chipotles, you can spoon out 2-3 spoonfuls of the adobe sauce from the can, and mix with the mayo. You will achieve the still the same flavor, but it will be more mild without the blended chipotles.
